Bangin' Brownie Bites
On the hunt for a new brownie recipe of the bite-size kind? Ummm always. Duh! Well, you’re in luck because these are as rich as they are dense and fudgey. Plus they are look super-cute too!
INGREDIENTS:
1 cup granulated sugar
1 cup brown sugar
1 cup melted vegan butter
1 cup of water
4 Tbs ground flax seed
1/2 tsp salt
1 Tbs vanilla extract
1 cup sifted unsweetened cocoa powder
1 cup all purpose flour
1 cup vegan friendly chocolate chips plus more for garnish
DIRECTIONS:
1. Preheat oven to 350 F. Grease a mini muffin tin.
2. Whisk together the flax and water and set aside to let it thicken for 5 minutes.
3. Mix together butter and sugar, then add flax egg and vanilla and mix thoroughly. Add all remaining dry ingredients (except the chocolate chips) then stir in the wet mixture and beat until smooth with no lumps. Finally, add the chocolate chips.
5. Spoon batter into muffin cups and sprinkle a few additional chocolate chips on top. Bake for 20 minutes or until the toothpick comes out clean.
6. Chill brownies in fridge to set them.
7. Let brownies sit out and become room temperature before cutting.
