MmmmmmMushroom Almond Soup
A must make five star chef quality soup that will impress even your snootiest, foodie friends. This makes an awesome first course for a dinner party, and is sure to create an abundance of "mmmms" all around the table.
INGREDIENTS:
- 2 Tbs olive oil
- 4 cups brown mushrooms
- 2 cloves of garlic, crushed
- 1 cup white wine
- 2 cups veggie broth
- 3 Tbs almond butter
- 2 Tbs dried thyme (not ground or fresh please!)
- Salt & pepper, to taste
- Dash of cayenne, upon serving
- Rosemary sprig or fresh parsley, for garnish
DIRECTIONS:
1. Heat olive oil in a soup pot, over medium heat.
2. Chop mushrooms roughly and sautée in the oil until very soft (approx 5 minutes).
3. Mix in the garlic, salt, pepper and thyme and sautée for another minute or two.
4. Add the wine, veggie broth, and the almond butter.
5. Simmer for 15 minutes.
6. OPTIONAL: Transfer to cuisinart/blender and blend until smooth.
7. Serve with dash of cayenne and sprig of rosemary or fresh parsley.
