Better Than The Real Thing Sour Cream
Rich, creamy a little sweet and yes, a little sour. Sure to make any Mexican dish that much more delish - from chili to nachos to pozole to fajitas.
INGREDIENTS:
- 1 cup of raw unsalted cashews
- 2 cloves of garlic
- 2 Tbs lemon juice
- 1 1/2 Tbs apple cider vinegar
- 1/2 cup of water (less or more depending on preferred consistency)
- 1 Tbs of fresh cracked pepper
- 2 tsp of salt
- 1 Tbs of dill
DIRECTIONS:
1. Soak cashews in boiling water for 1-2 hours. Alternatively microwave cashews in hot water for 7-10 minutes and let stand for 20 minutes.
2. Drain and add all ingredients to a food processor, reserving some of the water in case you prefer a thicker consistency.
3. Blend all ingredients until it becomes smooth
4. Refrigerate until cool then use as desired.
