Marvelous Chana Masala

It's simply marvelous darling. And simple too. 

INGREDIENTS:

  • 1 large yellow onion (diced)
  • 3 cloves of garlic (crushed)
  • 1 15 oz can fire roasted diced tomatoes 
  • 1 15 oz can crushed tomatoes
  • 1 jar of fire roasted red peppers (chopped)
  • 2 15 oz cans of chickpeas or garbanzo beans (drained and rinsed)
  • 1/2 15 oz can coconut milk
  • 1 1/2 Tbs of garam masala spice
  • 1/2 Tbs curry powder 
  • 1/8th tsp paprika 
  • 1 tsp crushed fresh ginger
  • 1/2 cup vegetable stock
  • 1 Tbs lemon juice
  • 2 Tbs Agave nectar
  • Salt & Pepper to taste
  • Handful chopped fresh cilantro
  • Optional: Basmati Rice/Naan Bread

DIRECTIONS:

1. Cook onion with a splash of veggie stock in a large pot on medium heat. Add spices and ginger and simmer until onion is soft. Continue with veggie stock to avoid onions sticking to bottom. 

2. Add both cans of tomatoes, chickpeas and coconut milk. 

3. Turn heat up very slightly and simmer for 20 minutes or until sauce begins to thicken. 

4. Stir in lemon juice, agave, and salt and pepper to taste. 

5. Turn off heat and let stand for 5 minutes. 

6. Serve over Basmati rice, with naan bread and top with fresh chopped cilantro.
