Brownie Bliss
Welcome to brownie bliss, where your troubles melt away into a landscape of dense, fudgey, rich, and perfectly sweet chocolate. Take the bliss up a notch by adding frosting.
INGREDIENTS:
- 1 cup + 2 tbsp almond milk
- 2 tbsp flaxmeal (ground flax)
- 1/2 cup + 3 tbsp oil
- 1 tbsp pure vanilla extract
- 3 tbsp apple sauce
- 1 1/4 cup spelt flour
- 3/4 cup unsweetened cacao or cocoa powder
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 cup brown sugar
- 1/2 cup cane sugar
- 3/4 cup vegan friendly chocolate chips
ICING INGREDIENTS:
- 1 cup cocoa powder
- 1 cup vegetable oil
- 1/2 cup of powdered sugar
- 3 Tbs maple syrup
DIRECTIONS:
1. Preheat oven to 330 F. Line an 9×9 pan with parchment or grease with oil.
2. Whisk together the first five ingredients and set aside.
3. Mix all remaining dry ingredients (except the chocolate chips) then stir in the wet mixture and beat until smooth with no lumps. Finally, add the chocolate chips.
5. Pour into pan and bake for 20 - 25 minutes, until toothpick in center comes out relatively clean.
6. Chill brownies in fridge to set them, then prepare the icing by whisking all the ingredients together until smooth. Do a taste test and adjust powdered sugar accordingly. If mixture becomes too thick, add a teeny tiny bit of water.
7. Once brownies are cool, pour icing overtop and spread quickly before it hardens. Let brownies sit out and become room temperature before cutting.
